You know that moment when its 5 o’clock and you don’t know what to cook for dinner?

I hate those evenings. What in the world am I going to cook? 

That moment happened to me. I knew we had shrimp, which meant there were some tasty options to choose from, but I hadn’t picked a recipe and was blanking in the moment.

On a whim, I decide to look up shrimp scampi, because who doesn’t love pasta and garlic  with their shrimp?

With my family living practically next door to the university, they had a revolving door of college students taking a summer class or doing a practicum unit at the local hospital. They were champs about  hosting and it was so fun to have a house full of college kids even in the summer.

I don’t know who they’d say was their favorite (not going to ask), but Sage definitely wins some prizes. Spending the Most Nights actually at our house, Celebrating the Most Holidays, and Making the Best Food: Dad Edition. The last prize was won singlehandedly with tzatziki.

We eat Mexican food at least once a week. It’s our go-to food, its ingredients we already keep in the house, and you can mix it up enough to never get tired of it.

Best of all, this dish is absurdly easy. When I need an easy meal to throw together for friends over, or I know we have a busy week ahead, I pull out the slow cooker and make these crock pot chicken tacos.

Happy Tuesday folks!! Today I’m sharing a killer meatball recipe that will please even the pickiest eaters.

Is it just me, or do people fall in one of two camps when it comes to spaghetti? Most of my friends are either “marinara and meatball” people or “bolognese” people. I grew up happily in the latter category and never missed meatballs, especially given my addiction to my mom’s spaghetti sauce. But one day, my husband came home on a tear for us to try to make meatballs. He’d seen the idea of stuffed meatballs on the internet and after doing some testing, this is what we created!

For some reason, I always thought of meatballs as being a lot of work. I’m not sure where I picked this us, but this recipe reminded me just how wrong that was! Even with the added step of “stuffing” the meatballs, the prepwork for this dish is only about 20 minutes.

I’m a baked-good addict. Fresh bread, straight from the oven. Cupcakes, even box cupcakes. Bagels for breakfast slathered in cream cheese or butter or jelly. Let’s not even get started on brownies. When we first got married my husband kept asking why I bought cheap bread. My reason was if it was the sub-par sandwich stuff, it kept me from eating it all.the.time.

Because of this, I’m always game to check out a health-ified bread option. So when Logan requested blueberry muffins, I went hunting for an option that didn’t really end up being a cupcake without the frosting.

Need a fancy but not fussy dessert? This decadent chocolate torte is perfect!

Chocolate Torte

What’s better than chocolate cake? Chocolate Torte! It’s richer and denser than a regular cake, and best of all makes you sound fancy when you say it.

I’m sharing this decadent dessert in honor of St. Patrick’s day! Somehow a rich chocolate cake felt like the perfect dessert after corned beef and Guinness.

Full disclosure: this torte will take time. It’s not the simplest and definitely needs a few hours to pull together. But it’s not complicated, just requires more than your beat-and-bake cake recipe.

From my standby, Mark Bittman’s How to Cook Everything. I dream of somday cooking all the recipes in the book but there’s about 5000 plus a million variations, so that’s probably not in the cards. But a girl can dream, right?

This chicken pot pie hits the spot for hearty, warming comfort food!

Chicken Pot Pie

Growing up, chicken pot pie was one of my favorite foods. It’s warming and rich without being too much, you know? So when I started cooking for myself, it was high on the priority list. Then I realized how processed most recipes are! Meaning: nearly all of them involve “cream of” something to give it’s signature texture. This is okay in moderation, but when making it for just two people to eat all week, that’s a lot of processed food.

So I kept looking, and finally came across this recipe! I based it on a blog that’s no longer in existence, so I can’t credit it. But the joy of chicken pot pie is after you’ve got the basics down, you can personalize the vegetables and spices you like most!

This recipe is ADDICTING. For two people, it’s hard to not eat half of it in one sitting! Consider yourself warned. It’s not difficult but it does take a couple hours start to finish, so this isn’t a weeknight meal. The positive of that is that it makes enough for three pies, so the extra labor pays off!
